It has been well over a month since I last posted and that was about our now completed Kickstarter Campaign, more on that later, but I have some updates about what I have done the last month or so. One of which is crossing off a cheese that is on my list of must try’s.
Páramo de Guzman is a raw sheep milk cheese that is aged for a minimum of 10 months and then packed in olive oil and sealed in a tin. This cheese was brought my attention when I read the book “The Telling Room” I had to try this cheese. A few months ago some friends were over for a cheese tasting and we spoke of this cheese and my friend Kelsie mentioned that he had some and he would bring it the next time he was in town. He said it was a great cheese and he did not lie.
Working With A New Rennet
Last year I was approached by a european company that produces an all natural enzyme from thistles, to help them develop cheesemaking kits for the home cheesemaking market. It was the first time I have ever been asked to trial products but so far I am happy with the results. We are still a ways from getting the kits to market, but the R&D has been fun.
CTV Edmonton – On Your Street Segment
On November 30th I made cheese and was interviewed by Dez Melenka from CTV Edmonton for the “On Your Street segment” You can watch the segment here (It might be Geo Locked). It was great to share my cheese and dream with the rest of Edmonton.
The Business Purchase
As you may or may not have heard the Kickstarter was not successful (thank you to all who pledged), but not to fear, we have secured the necessary financing to make our offer to buy the property and the equipment. We have moved on to plan b for the operating capital and have been talking to some potential investors. We hope to have a plan in place before Christmas, which would be an awesome present.
