Blue Cheese – The Taste Is Kind Of Growing on Me!

In the past I may have made some unkind comments about blue cheese, even after making several attempts to make a lactic blue.  My version of Stilton has started to change my mind.OLYMPUS DIGITAL CAMERA

This Stilton was made on December 27, 2014 and was my first attempt at a real blue cheese and not some little cheese I decided to throw together on a whim.  I am very pleased with how this is turning out.

The holes have appeared to  have stayed open.  I was worried they would close in.

There are some nice browns, greys, whites and blue hues on the rind.

I took a sample and I quite enjoyed the taste.  It still needs some time though.

I want to age it for another couple of weeks and then when I go to teach a cheese making class in Grande Prairie I hope to share it with the coordinator, who happens to love blue cheese.
