I have meant to give an update on my second Josef for a while, things have gotten in the way. Work, illness, writer’s block and Blue Cheese. Now with this Josef reaching 4 months it was time to update you on its progress
I am determined to keep this one in a ripening box until it is ready, no vacuum sealing for this cheese.
I used a draining bag/mould liner during pressing, I was very happy with the rind knit and the marks left by the bag add character to the cheese. Much like its name sake was in life.
Alas there is still another 8 months to go. Luckily I have my trier and in another 4 months I will take a sample to see how things are progressing. I hope to have a few more pictures up on Facebook later in the week.
