Clothbound And Down-7 Month Update

7 months have passed since I made my Clothbound Cheddar (Made February 8th, 2014) and 4 months since the last update.  I have made some changes to aging the cheese, it still has its own ripening box, but I have taken it off the wooden trivet and now placed it on cedar plank.  This has seen an explosion of life and colour on the bandaging.

7 Months in and still looking great.

The humidity in the box has evened out with the wood plank and the bandaging is starting to go grey instead of bright green. I have flipped the cheese once a week and brushing it once a month.

There is some colour showing on the sides touching the wood

I think the dark brownish-red gives it some character.

The greens are now muted.

The cedar has been working really well.

It has helped to control the aroma as well as the humidity.

For my next Clothbound I will have to make a better tag, one that won't blur.

I am pleased with how this cheese is progressing.  I hope to use the trier to take a sample sometime in December, but not before.  Here’s hoping my patience will be rewarded.
