Choosing Chilli Caerphilly and Cheddar

Just a quick up date on the cheese front.  I have mad a cheddar for our impending bundle of joy.  I know that a baby cannot eat cheese right away, that is why this one will not be opened until they turn one.

I decided to use a home made mold that I made from a food safe container that we had here.  I put my weights to good use by using then to press the cheese.  If the first cheddar is any indications this one should be good too.

The next one is a Caerphilly that made today.  This one is half chillies and half “regular”  I know that some of the chilli flavour might migrate over, but no pain no gain.
